Milky white to light yellowish brown powder. Soluble in water at room temperature into translucent viscous liquid, insoluble in ethanol, isopropyl alcohol and acetone and other organic solvents. Xanthan glue solution has good viscosity and is quite stable in the range of -4 ~ 80℃, when the concentration of ethanol, isopropyl alcohol or acetone in water exceeds 50% ~ 60%, it will cause the precipitation of xanthan gum. The ability to resist acid and alkali and bioenzyme degradation is very strong, and the viscosity of xanthan glue solution is not affected by Ph value in the range of 1.5 ~ 13.

Application

1. In the petroleum industry drilling, 0.5% xanthan glue solution can maintain the viscosity of water-based drilling fluid and control its rheological properties, so that the viscosity of the high-speed rotating drill bit is minimal, which greatly saves the power consumption, while the relatively static drilling part maintains a high viscosity, prevents the wall collapse, facilitates the cutting of gravel discharge outside the well and other functions.

2. In the food industry, it is better than gelatin, CMC, seaweed gum and pectin and other current food additives, adding 0.2% to 1% in the juice, so that the juice has good adhesion, good taste, control penetration and flow; As an additive to bread, it can make bread stable, smooth texture, save time and reduce cost; The use of 0.25% in bread filling, food filling and icing can increase taste and flavor, smooth product organization, extend shelf life, and improve the stability of products to heating and freezing; In dairy products, adding 0.1% to 0.25% to ice cream can play an excellent stabilizing role; Provides good viscosity control in canned food, can replace part of the starch, a xanthan gum can replace 3 to 5 starch.
